On any given night, in any given restaurant or food stall anywhere in the world, the Hot Line (be they elaborate or rustic) is the bridge where the produce from fields, pastures and waters, and the spices from far off lands, meet, mingle and then transition to busy waiters and eager hungry guests beyond.
